Getting a head start and loving it...

Today was probably my 2nd day of getting a good quality head start on the day...and i loved it just as much as i did the first time.  Why can't I do this everyday?  I don't know...  Actually, I do know, i am just TIRED.

Dad had to be up bright and early at 4:30 a.m, in order to be 'wheels up' by 6am.  I was awake and didn't go back to sleep.  By 6am, I decided to go downstairs and get the day started.  

Thursday is swim day...our day doesn't truly need to begin until 10am when we MUST leave the house.  As a result, it is usually "pancake day".  Of course, the last (several!) times I have gone to any number of grocery stores, I have forgotten to buy pancake mix.  

With this uncharacteristic morning energy and my desire to start the day off well, I pulled out my Mark Bittman's cookbook, How to Cook Everything. The pancake recipe was delicious and so easy!  No more buying a pre-made mix for us!

This is how the table looked at 6:30am...never does this happen!
